German-Layered Pancakes

INGREDIENTS:
Pancakes:
3 eggs
70g GF self-raising flour
60g ground almonds
1/2 teaspoon GF baking powder
6 tablespoons milk
virgin coconut oil, to fry
Chocolate sauce (optional):
50g butter
100g x 100% cocoa solids chocolate
2 tablespoons pure maple syrup
4 tablespoons double cream
4 oranges
4 tablespoons pure maple syrup
double cream to serve
PREPARATION:
Mix together the pancake ingredients until smooth. Heat about a tsp of the coconut oil in a small frying pan. Add 1/3 of the mixture. Allow it to spread around the pan. Cook gently on both sides until lightly browned. Repeat with other two pancakes. Set to one side until cool.
To make the chocolate sauce, put the sauce ingredients in a small saucepan and gently heat until everything is melted and smooth. Set to one side to cool.
Cut the skins off the oranges with a sharp knife, removing all the pith. Cut three of the oranges intro segments. Cut the other one into rings to decorate the top.
Once everything is cooled, assemble together. Put half the small segments of oranfe on the bottom pancake, along with 2 tbp of maple syrup and a good drizzle of the chocolate sauce. Repeat with the second pancake. Put the last pancake on top and then the rings of orange on top of that, again with a couple of tablespoons of maple syrup. Drizzle the rest of the chocolate sauce on top.
When serving, drizzle with cream.
